Tasting Notes: Just like my Vale dos Ares Vinho Verde - the Sem Mal is a nuanced and elevated expression from the region. While the Vale dos Ares is tropical, the Sem Mal Vinho Verde is high toned and more acidic. A perfect wine to have by the ocean with oysters (or pretend you are having by the ocean with oysters!). Very crisp and totally dry. Salinity and freshness with a slight effervescence. Low alcohol.
Vinho Verde's Bubbles: The spritz in this wine is caused by the winemaker bottling the wine before it fully ferments. Fermentation is sugar converted to alcohol with CO2 produced as a byproduct. If you bottle before the wine fully ferments the CO2 is trapped in the bottle and creates bubbles. This is what happened in the old days of Vinho Verde causing the original spritz (and other wines like the original Prosecco from Italy and Champagne). Hence, this wine is bottled with a an extra metal cover on the top, which acts like a champagne stopper.
